Tequila: A distillate originally from the municipality of Tequila Jalisco. It is the product of the fermentation and distillation extracted from the Agave variety Tequilana Weber. There are five states within mexico that hold the apellation of origin: Guanajuato, Michoacán, Tamaulipas, Nayarit and Jalisco. The origin of tequila goes back to the colonial time, when Carlos IV (1795) gave the first license to produce it, and it was given to José María Guadalupe Cuervo.
Mezcal: A word that comes from the náhuatl “mexcalli”, which means cooked maguey, was created back in the prehispanic period. The method used was distillation with pots, and it was only drunk by the priests. Mezcal is produced with the distillation of several varieties of Agave, being the principal espadín. In 1994 the origin apellation was declared for the Mezcal and the states where it is produced are: Durango, Guerrero, San Lus Potosí, Oaxaca, Sonora and Zacatecas.
Pulque: Produces with the fermented sap of the maguey, it was a very important beverage for the Aztec empire. Just the lords, the elderly and those who were to be sacrificed in the temple of the god of war where allowed to drink it. During the colonial times everything was done to prohibited it but it was not possible to stops its production. During the Porfiriato the Pulque so its glory time.
